1 cup applesauce
½ cup light molasses
1 tsp baking soda
1 ½ cups all purpose flour
1 tsp ground ginger
¾ tsp ground cinnamon
¼ ground cloves
¼ tsp salt
2 eggs
2/3 cup sugar
1/3 cup vegetable oil

Directions:
Preheat oven to 325 degrees. Grease and flour one 8×8 inch pan or line bottom with parchment.
Bring Applesauce to a boil in a saucepan over medium heat.
Remove from heat and stir in molasses and baking soda. It will foam and bubble vigorously. Let cool slightly.
Sift together flour, ginger, cinnamon, cloves and salt. Set aside.
In a large bowl, beat on high speed until thick and pale yellow (3 to 4 minutes); eggs and sugar; gradually beat in vegetable oil.
Fold in the flour mixture in 3 parts, alternating with the applesauce in 2 parts. Scrape the batter into the pan.
Bake until a toothpick inserted into the center comes out clean, 40 to 45 minutes.
Let cool in the pan on a rack for 10 minutes.
