1- 1 1/2 lbs. lean Ground beef
5-6 stalks celery
1 large sweet onion
1 pkg. any brand chili seasoning
1 28 oz can crushed tomatoes
1 16 oz can Bush's chili beans
1 16 oz Bush dark red kidney beans
1 6 oz. tomato paste

Directions:
Put beef in large pot. Trim celery about an inch from top and two inches from bottom. Split the stalks in half and chop into bite size pieces. Peel off outer layer of onion, trim off top and bottom and chop into small pieces. Toss celery and onion on top of ground beef. Brown over medium heat until hamburger is no longer pink.Cover pot and cook on medium low for 15-20 minutes until celery and onion are cooked. You can test a piece of celery for your desired soft/crunch preference. Cook longer if needed. Dump chili seasoning in and stir well. Dump in crushed tomatoes, chili beans, kidney beans and tomato paste. Stir together. Turn heat back up to medium high. Cover for 5-10 minutes or until thoroughly heated. Sprinkle with cheddar cheese if desired. Serve with fresh bread or corn muffins. Can be frozen up to 9 months.
