1 1/4 c. grated carrots
1 1.4 c. flour (can substitute potato flour for Passover)
1 c. crisco
1/2 c. brown sugar
1 egg separated
1 t. baking powder
1 t. salt
1/2 t. baking soda in a little water
juice of 1/2 lemon
1/2 t. cinnamon
1/2 t. nutmeg

Directions:

Combine all the ingredients. Pour into a buttered ring of mold
Bake 1 hour at 325.
Double this and use a bundt pan.
