1/2 c. pearl barley
1/2 c. Irish or steel cut oatmeal
1/4 c. chopped dried fruit ( apricots, cherries, etc.)
1/3 c. brown sugar
1/2 tsp. salt
41/2 c. water
1/2 tsp. vanilla
1/4 tsp. cinnamon
1 pinch cardamom
11/2 c. fresh fruit ( blueberries) optional
6/tbs. nonfat milk

1. Coat a slow cooker with non stick spray. Before going to bed add the barley, oats, dried fruit, sugar, salt and water to the pot. Turn heat to low.Cook overnight for 6-8 hours.
2. Just before serving, stir the porridge, scrape the sides into the rest. Stir in the vanilla, cinnamon, cardamom,and fresh fruit. Top with 1 tbsp. of milk.

This is a super healthy breakfast that keeps you feeling full all morning. Lots of fiber from the barley, oats and fruit.
