4 C. Flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 Tbsp.+ 1 tsp. cinnamon
5 eggs
3 C. sugar
2 C. oil
2 tsp. vanilla
6 C. peeled, shredded carrots
2 C. crushed pineapple, drained
3 1/2 -4 1/2 C. chopped walnuts

Directions:
Preheat oven to 325º Sift dry ingredients, Beat eggs, add sugar, vanilla, and oil until fluffy. Stir in flour mixture. add carrots, pineapple and & 1 1/2 Cups of nuts. Pour mixture into greased & floured pans. (3 or 4) Bake about 45 min. Until toothpick inserted into center comes out clean. Cool

Icing:
1 lb. Cream cheese, softened
1/2 C. unsalted butter, softened
4-5 sifted powdered sugar
1 tsp. vanilla

Cream butter, cream cheese, and vanilla, add powdered sugar in small amounts,
Frost cake, sprinkle remaining walnuts on top
