1 envelope Lipton Vegetable Soup Mix (Knorr works too)
4 c hot, mashed potatoes (no salt added)
1 c shredded cheddar or Swiss cheese
1/2 c chopped green onions (optional)
1 egg, slightly beaten
1/8 tsp pepper

Directions:

1. Preheat oven to 375º
2. In a lightly greased 1 1/2 quart casserole, thoroughly combine all ingredients except 1/4 c cheese
3. Bake 40 minutes
4. Top with remaining cheese and bake an additional 5 minutes or until cheese is melted

Personal Notes:
For grown-ups, leave the skins on and use Swiss cheese. For kids, remove the skins and use cheddar. Either way is delicious, but kids seem to fuss about skins in their mashed potatoes.
