6 c. cauliflower, chopped
1/4 c. diced white onion
1/4 c. butter
1/3 c. flour
2 c. milk
1 c. shredded swiss cheese
1 tsp. salt
1/4 tsp. garlic salt
1/4 tsp. white pepper
10 whole black olives
1 baby carrot

In saucepan cook cauliflower in small amount of water (6-8 min.) until crisp and tender, drain. In saucepan saute onion in butter for 2 min. Stir in flour until blended, gradually add milk. Bring to a boil for 2 min., stirring constantly. Remove from heat, stir in shredded cheese until melted. Add salt, garlic salt, and pepper. Place half of the cauliflower in greased 2 1/2 quart baking dish, top with half of sauce. Repeat layers, bake uncovered for 25-30 minutes at 350º. When finished make the snowman face on top. Use black olives for eyes and mouth and a carrot for the nose (cute) :)
