"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

6 c. cauliflower, chopped
1/4 c. diced white onion
1/4 c. butter
1/3 c. flour
2 c. milk
1 c. shredded swiss cheese
1 tsp. salt
1/4 tsp. garlic salt
1/4 tsp. white pepper
10 whole black olives
1 baby carrot

In saucepan cook cauliflower in small amount of water (6-8 min.) until crisp and tender, drain. In saucepan saute onion in butter for 2 min. Stir in flour until blended, gradually add milk. Bring to a boil for 2 min., stirring constantly. Remove from heat, stir in shredded cheese until melted. Add salt, garlic salt, and pepper. Place half of the cauliflower in greased 2 1/2 quart baking dish, top with half of sauce. Repeat layers, bake uncovered for 25-30 minutes at 350. When finished make the snowman face on top. Use black olives for eyes and mouth and a carrot for the nose (cute) :)
