1 box brownie mix
15 oz pumpkin puree
1 1/2 tsp pumpkin pie spice (or use combined cinnamon, allspice, ginger, and nutmeg)
8 oz light or fat-free sour cream
2-3 eggs (substitutes work fine)
1/2 c chopped apple
1 1/2 tsp dried or fresh cranberries

Directions:

Mix pumpkin spices, sour cream, and eggs together. Add to brownie mix and stir together. Fold in apples and cranberries. Pour into a greased and floured 9x9 pan and bake at 350º for 40-45 minutes.

Mr. Newcomer is a teacher at the kids' elementary school, and an active community member - always doing something for the kids. This recipe was in Susan's big recipe binder, in the form of an e-mail from Gail Taylor, the school librarian and good friend of Susie's. I can only assume these were served at school one day and were a hit, so the recipe went out.
