3/4 lb ground beef
1/2 lb ground veal
1/4 lb gound pork
Soak 1 1/2 soft bread crumbs in 1 cup light cream
1/2 chopped onion1 tbs butter
1 egg beaten
1/4 finely chopped parlsey
1 1/4 tsp salt
dash pepper
dash ground ginger
dash ground nutmeg

1. In grinder mix beef, pork and veal together twice.
2. Cook 1/2 cup onions in butter
3. Combine beaten egg, curmb mixture, onions, parsley, and seasonings. Add meats and beat 5 minutes with electric mixer.
4. Form into 30 balls,(mixture will be soft and wet hands or chill meat makes it easier)
5. In skillet brown meatballs in 2 tbs butter or oil. Remove from skillet. In the drippings add 2 tbs butter and stir. Add and stir in 2 tbs flour. Add 1 beef bouillon cube dissolved in 1 1/4 cups boiling water and 1/2 tsp instant coffee powder.
6. Cook and stir til gravy thickens and bubbles. Add meatballs. Cover and cook slowly abut 30 minutes. Baste occasionally.

When I buy the meat I have the butcher grind the meat together to save time. Takes time but is worth the effort.
