4 (4 ounce) Salmon filets
1 tbsp lime or lemon juice
1/2 c. Panko or dry bread crumbs
1/4 c. flaked, sweetened coconut
Salt and pepper to taste
Cooking spray

Directions:
Directions:
Preheat over to 425º
Place Salmon filets on non stick baking pan. Brush juice on salmon. In shallow dish combine Panko, coconut, salt and pepper. Dredge each filet in mixture and return to pan. Spread leftover crumbs onto filets and coat with cooking spray.
Bake for 12-15 minutes. If desired, put under broiler until crust is golden brown.

Drizzle with 2 tbsp melted butter and 1 tbsp brown sugar over coconut topping for a sugary addition.
