2 Chickens cut into serving pieces
1 Quart buttermilk
1 cup all purpose flour
1 tbsp. kosher salt
1 tbsp. ground black pepper
1 tbsp. tabasco sauce
Crisco shortening or vegetable oil for frying

Directions:
Directions:
1. Place the chicken pieces in large bowl and cover with the buttermilk and tabasco sauce. Cover with plastic wrap and refrigerate overnight..
2. Combine the flour, salt and pepper in large bowl, Coat chicken with mixture.
3. Use a large, heavy stockpot or fryer - - heat oil/shortening to depth of 1 inch to 360º. Fry chicken pieces until golden brown and place on metal baking rack on a sheetpan. Bake for 30-40 minutes.
