2 tsp. sugar
1 cup lukewarm water
1 packet of dry yeast
1 cup rice flour
1/2 cup of tapioca flour
1 1/2 tsp. of xanthan gum
1 T. of minced shallot or onion
1 tsp. fennel seed
1/2 tsp. salt
1 egg
3 T. olive oil
Parmesan cheese

Directions:
Directions:
Spray a flat pan with vegetable oil spray. Place sugar in the water and add yeast.
Place the flours, xanthan bum, minced onion, fennel and salt in a separate bowl.
In a heavy-duty mixer, blend the egg, 1 T. of oil and the yeast water. Add the flour mix.
Beat on high for 2 min. Pour the mix on the pan.
Add remaining oil, parmesean cheese. (see below for other possible toppings.)
Heat over to 400 ºF
Let dough rise for 20- 25 min. Bake for 20 - 25 min or until slightly browned.

You may add sundried tomatoes, sliced tomatoes, onion, green peppers and more cheese.
This dish is a quick and easy substitution for pizza for the gluten free individual.
