1 cup uncooked wild rice
2 cups chicken broth
Simmer about 45 minutes.I cook the rice with just water for about 30 minutes drain of water then add the 2 cups chicken broth and simmer for about 15 minutes.
Saute:
1/4 cup red onion in 2tbsp. butter
3 cans potato soup
1 quart milk.I use 1 pint 1/2 & 1/2 cream to make it 1 quart all together.
2 lbs velveeta cheese
10 strips bacon cooked
1 small can mushrooms

Directions:
Directions:
Put everything into a crock pot let it cook about 2 hours. I put the velveeta cheese in later so the cheese doesn't cook to the sides. I also don't use all the velveeta cheese I use 1/2 - 3/4 lb if you like it cheesy use it all. I also shredded 2 carrots into the soup it gives it color and it looks nice.

It's a pretty easy soup to make. and if you have left over's it freezes well.
