1 cup shortening
1/2 c sugar
1/2 c brown sugar
1 egg
3 tbs milk
1 tsp vanilla
3 c flour
1/2 tsp salt
1/2 tsp baking soda
2 c chopped dates
1/2 sugar
1/4 salt
1/2 c water
2 tbsp lemon juice

Directions:
Directions:
1. Cream shortening and sugars till fluffy: add egg, milk and vanilla: beat well.
2. Sift together dry ingredients: add to creamed mixture, mix well. Chill 1 hour
3. Date filling: Combine dates, sugar, salt and water. Bring to boil, reduce heat and simmer 5 minutes. Add lemon juice and cool.
4. On floured board, roll half the dough at a time about 1/8 inch thick. Cut with 21/2 inch round cookie cutter. Place abut 1 tsp Date Filling on each cookie. Top with another cookie, press edges with tip of inverted teaspoon or pinched together to seal. Bake on ungreased cookie sheet at 375 degree for 10-12 minutes.
