2 lg sweet onions
1 egg, lightly beaten
2/3 c. water
1 tbsp vegetable oil
1 t. lemon juice
1 c. flour
1 1/2 t. baking powder
1-1 1/4 t. salt
1/8-1/4 t. cayenne pepper
Vegetable oil for deep-fat frying

Cut onions into 1/2" slices; separate into rings. Place in a bowl; cover with ice water and soak for 30 minutes. Meanwhile, combine egg, water, oil and lemon juice in a bowl; mix well. Combine flour, baking powder, salt and cayenne; stir into egg mixture until smooth. Drain onion rings; dip into batter. In an electric skillet or deep-fat fryer, heat 1" of oil to 375º. Fry onion rings, a few at a time, for 1-1 1/2 minutes per side or until golden brown. Drain on paper towels.
(Onion rings may be kept warm in a 300º oven while frying remainder of batch.

Onion rings can be kind of a pain to make, but the eating sure is mighty nice. Ren'ee and her nurse, Susan made these one day and they were very good!
