12 oz. Asian Rice Vermicelli Noodle
2 medium size Chicken Breast
1 c. Bean sprouts
1 c. Mint leaves
1/2 c. Red onion ( sliced and grilled light brown)
1/2 c Fresh lime juice
1/4 c Sugar
1/3 c Asian Fish sauce
1/2 c Green onion minced
1/2 c. Cilanto - minced
10 Red leafy lettuce - pinch to small pieces

Directions:
Directions:
Put Rice Noodles in large bowl - soak in hot water x 1hour - until silky, then drained

Take the chicken breasts - marinate with pinch of salt and 1tbsp of soy sauce x 30 minutes.
Bake in oven 425º until golden brown.
Let chicken cool down. Hand shred chicken.

Mix in all the other ingredients.
