2 tablespoons butter, unsalted
1 large green onion chopped finely
2 cups all purpose flour
1/4 cup white cornmeal
1/4 cup sugar
1 tablespoon baking powder
salt to taste
pepper to taste
1 1/2 cups shreddeed cheddar cheese
1 cup whole milk
1/2 cup plain yogurt
1 cup cooked mild sausage
1/4 cup mild chunky salsa
1 tablespoon spicy mustard

Prepare muffin tins by spraying them with Pam cooking spray. Melt butter in a small skillet over medium heat, Add the green onion and cook for two minutes. Transfer onion to a bowl. Cook sausage till brown. Drain and place with onion. Mix the dry ingredients together and add the wet, ingredients to them, starting with the onion, sausage, egg, etc. Place the mixture in the muffin tins about two thirds full and bake at 400º till brown
