"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
4 c. sugar
1/2 lb. butter
1 1/2 c. dark Karo syrup
2 lg cans evaporated milk
1 tbsp vanilla

Directions:
Directions:
Bring sugar, butter and syrup to a hard boil in large, heavy saucepan. Punch small holes in cans of milk and slowly pour into boiling mixture. Keep the syrup boiling all the while you are pouring in the milk. If boiling stops, discontinue pouring milk until mixture boils, then begin again to pour in the milk. Stir constantly until candy reaches the firm-ball stage, 244º on the candy thermometer. Remove from heat; add vanilla. Pour onto a buttered cookie sheet. A walnut half may be put on each piece of marked candy, or chopped nuts may be stirred in when adding vanilla. When cool, cut and wrap candy in individual squares. (I use Saran Wrap).

Personal Notes:
There is no caramel that can hold a candle to homemade ones! They are just the best. Not nearly as chewy as the store-bought ones. I've never put the nuts in. I think they are good without.
