Spoon yogurt into a sieve lined with cheesecloth, cover with plastic wrap. Set over a bowl to drain. Refrigerate for 2 to 3 hours until yogurt is thick and reduced to about 1 1/3 cups.

This is a good alternative to mayonnaise and cream cheese in dips, salads etc.
