1/2 english cucumber
1 1/3 c. Yogurt cheese
1 c. crumbled drained feta
2 c. chopped fresh baby spinach
1/4 c. chopped fresh chives or green onion
2 cloves of garlic, minced

Directions:
Directions:
1. peel cucumber and shred into a colander. Let stand in sink or over a bowl for 30 minutes. Squeeze lightly to expel excess liquid.
2. In a bowl, combine cucumber, yogurt cheese, feta cheese, spinach, chives and garlic. Stir to mix well.

Serve with pita slices. Also good on burgers and sandwiches or baked potatoes. Good in refrigerator for up to 2 days.
