1/2 c margarine
1/2 c sugar
1 egg, beaten
1 tsp soda
1/4 tsp salt
1 c flour
1 c yellow cornmeal
1 1/2 c. buttermilk or sour milk

Directions:
Directions:
Cream margarine and sugar until light. Add egg. Gradually add combined dry ingredients alternating with buttermilk. Pour into Pam sprayed 9x9" pan. Bake at 425º for 25 minutes.

Awesome fresh out of the oven! Why use a mix when this winner is so easy. Perfect with chili and a green salad on a wintry night. Grandma McCarthy liked a leftover piece (or two) split horizontally, buttered, then browned under the broiler.
