1/4 c. soy sauce
1 Tbsp. cornstarch
1 Tbsp. grated fresh ginger (optional)
1-2 Tbsp. vegetable oil
1 lb. poultry, pork or beef cut in 1/4" thick slices
Garlic clove (optional)
2 c. sliced vegetable or combination of vegetables (such as carrots, broccoli, celery, onion, green or red peppers)
2-3 c. vegetable or combination of vegetables (such as bean sprouts, sliced mushrooms, snow peas)
1/2 c. bamboo shoots or water chestnuts

Mix soy sauce, cornstarch and ginger for marinade. Toss with meat and set aside while you prepare vegetables.

When all ingredients are assembled beside wok or skillet, drain poultry or meat reserving marinade.

Heat skillet over high heat. Swirl in 1 Tbsp. oil. Add meat and stir-fry about 2 min. Add vegetables, beginning with the first group. Toss quickly. Add more oil if needed.

Push solid ingredients to side. To reserved marinade, add water or broth to equal one cup. Add mixture to skillet and stir until thickened. Mix all ingredients together. Serve with rice.
