1/2 c. raisins
3/4 c, crushed pineapple, undrained
1 c. dark brown sugar, firmly packed
1/2 c. butter or margarine, softened
1 egg, unbeaten
1 t. vanilla
2 c. flour
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 c. walnuts, chopped (opt)

Directions:
Directions:
Mix raisins and pineapple; set aside. Combine sugar, butter, egg and vanilla in mixing bowl; beat until fluffy. Stir in pineapple and raisins. Stir together the flour, baking powder, soda and salt; add to batter and mix well. Stir in nuts; drop soft dough by teaspoonfuls 2" apart on greased baking sheet. Bake at 375º for 12-15 minutes or until lightly browned.
