3 cans mandarin oranges; drained (11 oz. or 2 - 15 oz. cans)
1 head red cabbage (2.5 pounds +/-; shredded)
1 bunch green onions; sliced
1/4 c. cilantro; roughly chopped +/- to taste
1 c. roasted salted Virginia peanuts; roughly chopped
1 tsp. red pepper flakes

DRESSING:
2 Tbsp. chile sesame oil
4 Tbsp. sherry vinegar
4 Tbsp. sugar
salt and freshly ground pepper to taste

IN THIS ORDER: To a large mixing bowl add shredded cabbage, drained oranges, sliced green onions, chopped chopped cilantro, chopped peanuts, and red pepper flakes. Set aside. Make dressing by combining chile sesame oil, sherry vinegar and sugar in a small bowl and whisk to emulsify. Pour over salad and toss just before serving. Add kosher salt and freshly ground pepper to taste.
