Ingredients:  
Golden Potatoes, Red Potatoes and Russet Potatoes – 1 lb each
Mayonnaise ( Fat Free works )
Yellow Mustard
Seasoning salt ( Creole) or Emeril's) , cayenne pepper to taste; ½ tsp.paprika.
Seasoning: Fresh parsley, green onions and celery chopped very fine
5 boiled eggs

1.Boil potatoes until soft with eggs, allow to cool, then peel eggs and remove skin form potatoes.
2.Cut potatoes in small pieces then add fresh chopped seasoning.
3.While potatoes are warm, add ½ cup mayo and 3 tablespoon of mustard.
4.Add seasoning salt and cayenne pepper to taste.
5.Mix well and serve on a bed of lettuce.
6.Sprinkle paprika on top to garnish.
