Ingredients: 1 angel food cake, cut into 1 inch cubes 12 ounce package semi-sweet or dark chocolate chips 2 Tablespoon water 4 Tablespoon powdered sugar 6 egg yolks at room temperature, lightly beaten 6 egg whites at room temperature 1/8 tsp. cream of tartar (optional) 2 cups heavy whipping cream, chilled

Directions:In a very large microwaveable bowl place the chocolate chips and 2 T. water. Microwave on high for 1 minute. Remove and with a wooden spoon stir vigorously to melt and cool the chocolate. Add the 6 slightly beaten egg yolks in three batches, stirring vigorously to mix. Add the powdered sugar and stir until incorporated and the chocolate mixture is smooth and shiny.
Beat the egg whites and cream of tartar until stiff peaks form. Whip the cream until firm peaks form. Gently fold 1/3 of the egg whites into the chocolate until incorporated. Add the remaining egg whites in two batches, folding gently to incorporate. Gently fold in the whipped cream in 2-3 batches until incorporated. Pour chocolate mixture over cake and fold gently to cover all the cake cubes with chocolate. Pour into a 9 x 13 pan and chill for at least 2 hours. |
