10 eggs, beaten well
2 c grated cheese
1 lb. sausage, cooked & crumbled
1/3 c chopped onion
1 sm box defrosted chopped spinach
1 1/2 c milk
1/4 t pepper
1/2 t salt
1/2 pkg sliced mushrooms
chopped tomato, if desired

Spray liberally a 9x13 baking dish or 2 muffin pans. In a large bowl, mix well: beaten eggs, cheese, milk & sausage. Saute the chopped onion & mushrooms, addto egg mixture along w/spices. Add tomato & spinach. Pour into baking pan & sprinkle paprika over the top. Bake at 350 for 35-45 minutes or until set & just browing around the edges. (You can bake for 30 minutes & refrigerate overnight, then bake for 10-15 min. more just before serving.) For a spicier version add 1 T salsa.
