1 .25 oz pkg dry yeast
4 T white sugar
1 1/2 c canned mashed sweet potatoes
1/2 c warm water
1 tsp salt
2 eggs
3 c flour

Directions:
Directions:
Dissolve yeast in 1/2 c warm water (can use sweet potato water from can) Add sugar and let stand for 5 min. Add everything-mix and knead 3-4 min. Add a little flour if sticky. Let rise for 1 hour, punch down then roll. Bake on sprayed pan 12-20 min. 375º These can freeze, just thaw for 4 hrs then bake as usual.

Lonnie made these for me when I was on a strict health diet in High School. I wasn't allowed to eat very many things when we visited her in Michigan for Thanksgiving. She went to great lengths to make a meal I could enjoy too. Now they are some of my favorite rolls, diet or not!
