Ingredients:  
15 pounds tomatoes, blanched & peeled
1/2 cup onions
2 cloves garlic, pressed
1/2 cup celery or peppers
1/2 pound mushrooms
2 teaspoons salt
1 Tablespoon oregano
1 teaspoon pepper
1/8 cup brown sugar
1/8 cup vegetable oil
2 pinches dried thyme

Directions:
Directions:
Combine all the ingredients in a large pot and bring to a boil. Reduce heat and simmer until desired consistency. Let cool, package in plastic bags and freeze in 3 or 4 cup servings. When ready to use, just thaw and add one pound of browned hamburger. Or, to use for pizza sauce just thaw and blend in batches for a few seconds until smooth.
