1 pound uncooked chicken breasts, but into 1 1/2 inch pieces
2 cups plain nonfat yogurt, divided
3 medium garlic cloves finely chopped, divided
2 Tablespoons fresh rosemary leaves, finely chopped
4 Tablespoons fresh lemon juice
2 large sweet red peppers, cut into 1 1/2 inch strips
1 large cucumber, cut into 1/4 inch pieces
1/2 cup red onion, finely chopped
1 Tablespoon parsley, finely chopped
1 teaspoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Directions:
Directions:
Place chicken in a medium bowl and add 1 1/2 cups yogurt, 2 chopped garlic cloves, rosemary and lemon juice. Let mixture marinate for at least 15 minutes or up to overnight.
Coat a broiler pan with cooking spray. Broil chicken and red peppers, turning once, until chicken is cooked through, about 3-4 minutes per side.
Meanwhile, to make the relish combine cucumber, onion, remaining 1/2 c. yogurt, remaining chopped garlic, parsley, oil, salt and pepper in a medium bowl. Serve this relish over the chicken.
Yields about 1 1/2 cups of chicken and 1/2 cup relish per serving.
