Ingredients: Ingredients: 1 lb ground beef taco seasoning 1 large Spanish onion or 2-3 small cooking onions 1-3 cloves garlic 1 head of lettuce - your choice 1-2 green onion 1-2 med size tomatoes 1 stalk of celery 1 carrot 1 pepper total (red, green, yellow,orange peppers - all or whatever you choose) Shredded cheese (1/5 - 1 cup) Choice of either Catalina or Ranch dressing Nacho chips or corn chips jalapeņo peppers and Franks Hot Sauce (both optional)

Directions:Fry ground beef in large frying pan. Press 1-3 cloves of fresh garlic. Dice onions. Once beef cooked drain any fat. Add in a 1/2 cup water and 1 package of taco seasoning. For a little spice, add either jalapeņo peppers or Frank's red hot sauce (to taste). Let the beef mixture simmer until the liquid is at a thicker consistency. Remove from heat. Break apart either the lettuce. Chop green onion, tomatoes, celery, carrots and coloured peppers. Add your favourite shredded cheese and toss all together in a large serving bowl with the lettuce. Add the meat (doesn't have to be completely cool) to the lettuce/veggie/cheese mixture. Add either nacho chips or for a great alternative in texture and flavour use regular corn chips. Drizzle either Catalina or Ranch dressing over and toss to spread evenly through the salad. |
