1 lb. lasagna noodles (fresh noodles are best)
2 tbsp. Extra virgin olive oil
Ragu Bolognese (recipe in sauces section)
8 oz. parmigiano reggiano, grates
3 1/2 c. Besciamella (recipe in sauces section)

Bring 6 quarts of salted water to a boil. Set up an ice bath next to the stove top, and add the oil. Cook noodles until tender. Transfer to ice bath to cool, then drain on kitchen towels, laying pasta flat.

Preheat oven to 375º F.

Assemble lasagna in one or two 9-by-13 inch lasagna pans: Spread a layer of ragu over the bottom and top with a sprinkling of Parmigiano, a layer of pasta, a layer of besciamella, another layer of ragu, a sprinkling of Parmigiano, and pasta. Repeat until ingredients are used up, finishing with a layer of pasta topped with besciamella and a sprinkling of Parmigiano.

Bake for 45 minutes, or until the edges are browned and sauces are bubbling. Let stand for 10 minutes before serving.

This is a great lasagne recipe from Mario Batali, a favorite at our house. It's so different from what you get in restaurants, it's a nice change.
