1 lb. pecans 1 egg white 2 Tbsp. water 1 tsp. salt 1 tsp. cinnamon 1 c. sugar
Preheat oven to 250º. Beat egg white and water till frothy. Stir in pecans. Mix salt, sugar and cinnamon in plastic bag. Shake to mix. Add pecans, shake well. Spread pecans on 2 cookie sheets (use metal pans). Bake for 45 minutes. Take off pans as soon as possible. Put onto waxed paper until cooled.
