"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Directions:
In mixer bowl combine 2 cups flour and the yeast. Heat milk,1/3 cup sugar,1/3 cup butter and salt until warm (115 degrees-120 degrees) stir constantly. Add to flour mixture, add eggs one at a time beating with mixer at low speed for 1/2 minute after each egg .Then beat at high speed for 3 minutes, stir in as much of the remaining flour as you can mix in with a spoon. On a floured surface, knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic. (about 6-8 minutes)

Shape into a ball and place in a greased bowl. Cover and let rise in warm place until double about 1 hour. Punch down, divide in half and cover, let rest for 10 minutes.

While dough is resting, combine brown sugar, butter, and dark corn syrup in a sauce pan to make sauce. cook slowly and stir just until blended and sugar is dissolved.

Divide this sauce between 2- 9 inch pans sprinkle pecans over sauce.

Melt 4 Tablespoons butter.
Roll out one piece of the dough into a 12x8 rectangle, brush with half the melted butter. Combine 1/2 cup granulated sugar and 2 teaspoons cinnamon, and sprinkle half this over dough, sprinkle with raisens to taste.. Roll up jelly roll style. Beginning from the longest side, tucking ends, cut into 9-12 pieces and place in pan. Repeat with second piece of dough.

Cover and let rise until double approximately 45 minutes. Bake at 375* for 15-17 minutes. Remove from oven and invert on serving plate immediately, be sure to scrape all the nuts and caramel from the bottom of the pan!

Personal Notes:
Personal Notes:
This was "APPLE COUNTRY BED AND BREAKFAST" signature dish. Jerry would make the recipe up to the last rising of the buns wrap and freeze them. Take the frozen buns out of the freezer before going to bed unwrap and cover with a towel, leaving on counter. In the morning they would be ready for the oven, and our guests had fresh buns from the oven! Our family has enjoyed these on Christmas morning for years too as a Jerrys' gift.
