1 cup chopped apricots
1 cup boiling water
1 cup sugar
1/2 cup softened butter
1 cup sour cream
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon grated orange peel
1/2 cup chopped pecans

Directions:

Soak apricots in boiling water 5 minutes.Drain and discard water.Cream sugar and butter, add sour cream, mix well Combine dry ingredients and stir into creamed mixture, just to combine do not over mix , Batter will be very stiff, Don't worry (don't thin) Add drained Apricot pieces and nuts and orange peel. Pile up (batter will be almost so thick you can form into balls), into greased muffin tins. Heap them high--should make exactly 12. Bake 18 minutes or so at 400º.
