2 eggs
8 oz. sour cream
1/4 c. milk
1/2 c. fine dry bread crumbs
1/4 c. finely chopped onion
2 tbsp. snipped parsley
1 tbsp. Worcestershire sauce
1 tbsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper1 1/2 lb. lean ground beef
1 pkg. brown gravy mix
1 recipe mashed potatoes
Potatoes:
4 potatoes
2 tbsp. butter
1/4 tsp. salt
Dash pepper
2-3 tbsp. milk

Directions:
Directions:
For meat loaf: In a large bowl combine eggs, 1/2 c. sour cream, and milk; stir in bread crumbs, onion, parsley, Worcestershire sauce, mustard, salt and pepper. Add beef, mix thoroughly. Pat into a 9 x 5 3 in. loaf pan. Bake uncovered in a 350º oven for 1 1/4 hours or until meat thermometer registers 170º.
For gravy: Stir together remaining sour cream and gravy mix. Add water as called for on package. Cook according to package directions.
For potatoes: Boil potatoes 20-25 min.; drain. Beat or mash. Add butter, salt, pepper, and milk. Beat until light and fluffy.
