3 cups cooked rice; best if using day old rice
1 cup cooked meat
2 eggs
1/2 cup peas and carrots or other cooked vegetables
2 stalks green onions, greens included, sliced
2 tablespoons soy sauce (or 2 teaspoons salt and 1 teaspoon pepper)
5 tablespoons cooking oil

Directions:
Directions:
Scramble eggs in 1 tablespoon oil until cooked, remove from pan. Saute peas & carrots in 1 tablespoon oil until cooked, remove from pan & add to eggs. Heat remaining oil until hot, add rice, meat, and green onions; heat thoroughly. Add soy sauce or salt and pepper and mix well.
