• 8 eggs
• 2 cups heavy cream
• 2 cups milk
• 2` (6 oz) pkg. cornbread stuffing mix
• 1 lb, browned, spicy pork sausage (we like Jimmy Dean)
• 1 cup dried cranberries
• Optional: ½ cup diced onion or 1 bunch cleaned and chopped green onion
• Optional: top with shredded cheese and melt before serving

Pre-heat oven to 350 degrees and spray a 9X13 baking pan with non-stick spray. Beat eggs, stir in cream and milk. Add stuffing mix, browned meat and dried cranberries – stir until well mixed. Pour in pan and bake for 30 - 40 minutes or until set in center, let stand 5 minutes before removing from pan.
