40 Tomatoes - Blanche, peal, core, dice to fill an 8 quart pot.
5 onions
6 green peppers
7 Jalapeno peppers with seeds
1/3 c. uniodized salt
1 c. Cider Vinigar
1/2 c. white sugar

Directions:
Directions:
Chop onions and peppers, add to tomatoes. (Use rubber gloves to chop the Jalapeno peppers so that the oil doesn't burn your hands!) Add vinegar, salt and sugar. Cook on low until Salsa is to the thickness you want. Process in pint jars at 10 lbs. pressure for 10 min.
