1/2 cup oil
2 cups sugar
3 eggs-slightly beaten
2-1/2 cups flour
2 tsp. baking soda
1 tsp. vanilla
dash salt
2 tsp. cinnamon
4-6 cups peeled and sliced apples
1 cup nuts (optional)

Directions:
Directions:
Preheat oven to 355º
Beat oil, vanilla, eggs and sugar until blended well
Add flour, baking soda, salt and cinnamon and mix well. Batter will be thick to work with, may want to mix by hand.
Add apples and nuts and stir well.
Pour batter into a greased bundt or a 9x13 cake pan.
Bake for about 50 min. (If a 9x13 pan is used, it may bake slightly quicker.
