1/2 c. flour
1/2 tsp. salt
1/4 tsp. pepper
6 boneless, skinless chicken breast halves
1/4 c. butter
1 c. fresh or frozen cranberries
1 c. water
1/2 c. brown sugar packed
Dash of ground nutmeg
1 tbsp. red wine vinegar, optional
Cooked rice

Directions:
Directions:
In shallow dish, combine flour, salt and pepper; dredge chicken. In a skillet, melt butter over medium heat. Brown chicken on both sides, remove and keep warm. In the same skillet, add cranberries, water, brown sugar, nutmeg, and vinegar. Cook and stir until the cranberries burst, about 5 min. Return chicken to skillet. Cover and simmer 20-30 min. until chicken is tender, basting occasionally with the sauce. Serve over rice.
