Cinnamon Roll Dough:
Starter:
1/2 c sugar
1/2 c Idaho potato flakes
1 t. dry active yeast
1 1/2 c warm-hot tap water

Dough:
1 c starter
1/2 c sugar
1/2 c oil
1 T salt
1 1/2 c hot tap water
1 T. (pkg) active dry yeast
6 c flour

Filling:
2 sticks butter
1 1/2 c brown sugar
1/2 c cinnamon
1 c chopped walnuts or pecans
1/2 c raisins

Starter: One day before you plan on baking the cinnamon rolls combine the starter ingredients & store in glass jar. Stir this mixture occasionally with a rubber spatula. Your starter should soon start bubbling.

Dough:
In a mixer fitted with a dough hook, mix together starter, sugar, oil, salt water, yeat & flour. After mixing the dough for about 2 min., remove the dough to a greased bowl. Cover with a towel and let rise until doubled in size. The rising process will take 1 to 4 hrs. When doubled, dump the dough onto a well-floured surface & knead. Using a rolling pin, roll the dough into a rectangle about 1/4' thick.

Filling: Melt 2 sticks of butter to where it is creamy and spreadable. Spread the butter onto the dough, making sure you spread to all corners. Sprinkle brown sugar and cinnamon over the butter making sure you cover to all edges. Top with chopped nuts & Raisins. Carefully roll the rectangle into a tube. Slice into 1 1/2' sections, place on greased baking dish and let rise in pan while preheating oven to 350º. Bake for 30 min.
