2 lb. red potatoes
3 tbsp. onion, sliced paper thin
3 hard boiled eggs, coarsely chopped
1 green pepper, seeded and finely chopped
2 stalks celery, chopped
2 tbsp. sliced ripe olives
2 tbsp. pimento, finely chopped
1 tbsp. finely chopped Italian parsley
2 tbsp. chives

Directions:
Directions:
Boil unpeeled potatoes in salted water for 25-30 min. or until fork inserts easily. Slice into 1/4 in. slices. Add onion to warm potatoes. Mix together eggs, pepper, celery, pimento, ripe olives, and parsley. Add to potatoes and onions. Add mayonnaise to moisten. Season to taste.
