1 lb ricotta cheese
4 oz mozzarella cheese, shredded
3 TBS grated Parmesan cheese
1 TSP sugar
1 egg, slightly beaten
nutmeg, to taste
1 TBS finely chopped parsley
salt and pepper
1 (5 oz) package manicotti, uncooked
1 15.5 oz jar meatless marinara sauce

Directions:

Combine ricotta, mozzarella, Parmesan, sugar, egg, nutmeg, salt & pepper. Place mixture in gallon size ziplock bag. Cut small edge off corner of bag. Squeeze mixture out of small opening into uncooked manicotti. Arrange manicotti in single layer pan. Bring sauce to a boil and pour over manicotti, covering completely. Cover baking pan with aluminum foil, crimping edges to seal tightly. Beak in preheated 400º oven for 40 minutes. Remove foil, sprinkle generously with additional grated cheese. Bake uncovered 5 minutes more.
