2 cups cooked chicken
2 Tbsp. fat or butter
2 Tbsp flour
1 cup milk or cream
salt and pepper
1 Tbsp. parsley
1 egg yolk

Directions:
Directions:
Make a white sauce of fat, flour and milk. Best done in a double boiler. Cook slowly or milk will scald or burn. Season with salt and pepper. When thickened, add the parsley and chicken...Cook until sauce is thoroughly hot again. Beat the egg yolk with a fork, adding 2 Tbsp. of milk and pour into mixture. Cook two more minutes, stirring constantly.

Serve immediately over toast.
