1 Navel Orange, quartered
12 oz bag Fresh Cranberries
1 1/2 C Fresh Pineapple, diced
1 1/2 C Granny Smith Apple, diced
1 1/2 C Jicama, peeled and diced
3/4 C Sugar
1/3 cup chopped fresh mint
pinch of salt
1 C Pecans or Walnuts, chopped and toasted

Directions:
Puree orange (with rind) in a food processor; transfer to a large bowl. Pulse cranberries in a food processor until coarsely chopped. Stir the cranberries and remaining ingredients into the orange puree. Serve chilled or at room temperature.
