30 oz Garbanzo Beans, drained
1/2 C Water
1/4 C plus 2 T Tahini
3 T plus 2 tsp Lemon Juice
2 T Olive Oil
1 lg minced Garlic Clove
1 1/2 tsp Cumin
4 oz jar diced Pimientos, drained
1/3 C chopped Cilantro
2 1/2 tsp minced canned Chipotle Chiles

Directions:
Directions:
Reserve 3 tbsp. beans for garnish. Blend all ingredients except pimientos in a food processor until smooth. Add pimientos and pulse until they are coarsely chopped. Transfer hummus to a bowl and stir in cilantro. Salt and pepper and garnish with extra garbanzos (can be made 1 day ahead). Cover and chill. Bring to room temperature before serving.
