1 - 2 C Bulgar #1 (Cracked Wheat)
1 lb ground Turkey
1 lb lean ground Beef
2 T dried Mint leaves
1 t Salt
1 t Pepper
1 T Cumin
1/2 t Red Pepper (Cayenne)
2 T olive oil, plus more
1 t onion Salt
2 - 3 T Pine Nuts

Directions:

Soak Bulgar for 20 minutes. Put ground beef and turkey in a large bowl. Pat meat together and push down a ditch in the middle. You will add the seasonings in the center to easily mix kibbi together with hands. Sprinkle in the mint, salt, pepper, cumin, red pepper, oil and onion salt (and pine nuts if you don't want to add them at the end). Mix well by hand after adding the bulgar.

Spread out kibbi into an oiled baking pan. Cut into diagonal pattern. Smooth out top and add more oil. Adding more oil keeps this lean-meat dish from over-baking. Press 2 - 3 pine nuts on top of each kibbi piece (if you didn't add them to the batch already). Bake 375º for 30 - 40 minutes.
