1 6 lb. baby salmon, deboned, head off, skin on and cut into 2 fillets
6 tbsp. sesame seeds
1 cup medium dry sherry
6 tbsp. soya sauce
6 tbsp. oriental sesame oil
4 tbsp. minced fresh ginger
2 tbsp. minced garlic
1 1/4 cups scallions, sliced small

Directions:

Rinse the fish and pat dry with a paper towel.
Place the salmon in a low roasting pan, skin side down.
Make the marinade by mixing all the ingredients together.
Pour over salmon in the pan and marinate uncovered at room temperature for one hour.
Broil on a cookie sheet about 4 inches from the heat source for 10 minutes. Reduce the temperature to 450º and bake on the middle shelf for 5 more minutes.
Serve warm or at room temperature.
This recipe can be halved for a smaller piece of salmon but cannot be increased.
