4 C. water
4 slices of lemon, cut in half
4 slices of onion, cut in half
¼ C. parsley springs
½ tsp. salt
¼ tsp. coarsely ground pepper
1 pound salmon fillet

Honey Mustard Sauce
2 T. lemon juice
1 T. honey
1 T. Dijon mustard
1 T. olive oil (may substitute vegetable oil)
Blend all ingredients well.

Garnish Mixture
¼ C. chopped fresh parsley
2 T. finely chopped red onion
2 tsp. capers
1 tsp. grated lemon zest
¼ tsp. salt
Combine all garnish ingredients and set aside.

Heat water, lemon slices, onion slices, parsley sprigs, salt and pepper to a boil in a 10-12 inch covered skillet; boil 3 minutes. Reduce heat to medium-low. Add salmon, skin side down. Cover and cook 5-6 minutes or until salmon flakes easily with a fork. Remove salmon from liquid in skillet and discard liquid. Cool completely. Cover and refrigerate at least 2 hours, but no longer than 24 hours.

To serve, carefully remove skin from salmon; place salmon on serving plate. Sprinkle with ¼ tsp. salt. Drizzle Honey Mustard Sauce over top; sprinkle with garnish mixture.
